Halo fansite, Halo Zone, has a complete guide to both human and covenant weapons and vehicles. Although some of them are from the former PC version, it's for sure that most of them could end up in the Xbox version.

It is the same as the tank, only bigger. Bigger size, bigger gun, more armour, more fun. And there's also a Water Vehicle. This one has only been seen as concept art from Bungie. Since there's an ocean in the levels we've seen it's possible that this vehicle will be included as well.
In the weapons section you can find a Surface to Air Missile Launcher, which looks awesome. It'll great if you can take down covenant ships with this bazooka.

Then you have an harpoon, a machete (jungle levels?) and a minigun, which consist of three rotating barrels that fire of 19mm rounds at an extremely fast rate.
The Covenant weapons are already known by us but the vehicles really looks like alien technology. The Jeep looks better than the human one althought its appearance on the Xbox version is pure speculation.
