I've been trying to place the voice. What I can tell so far is that, well, I disagree it's hispanic. To me, it's pretty plainly not. In fact, it's more remiscent of Klebitz's voice (though I'm not saying it's Klebitz). I don't hear any hispanic in it at all.
I want to focus on this bit:
"...thought I'd be a dad like all the other dads.
My kids? They'd be like the kids on T.V.
We'd play ball... and sit in the sun... but...
Well, you know how it is."
The voice actor is good. I get a lot of emotion from his voice. That dialogue leads me to think that he definitely has children when we meet him in this story. The fact that he brings them up seems out of place if he doesn't have kids. Sure, he could be thinking about "what if..." but I think he does. He puts a lot of time in talking about them. Normally when people don't have kids and are talking about them in the future, they just say "I'd like to have kids" and leave it at that. However here, he puts a lot of thought into the kids and what activities he COULD do with them and how they would live. All of this makes me think that he does in fact have kids already.
The fact that he talks about the activities he'd like to do with them (play ball, sit in the sun...) leads me to think that he wishes they had an alternate life together. What do I mean? It's very possible that his children commit crimes with him, like they did back home. A family run "business" when it comes to crime. Not necessarily Italian or anything, but family. The way he says "but... you know how it is" definitely leads me to think that some kind of money situation or other serious problem led them all back into crime and I can picture a smile on his face when he says it.
With that in mind, I place the character's age in his late forties (and not hispanic), close to fifty making his kids probably in their twenties. I doubt the main character has broken into his fifties though it's possible and he's in good shape for his age. Considering Rockstar, one of his kids may even refuse to do crime. He may have as few as two total kids. Maybe one that does jobs with him, and one that actively opposes it. Notice that right after he says "but you know how it is" to the idea of playing ball and sitting in the sun, a character jumps out of the van and taps on the door, where two other guys jump out. I definitely think this might be the main character (out of van first) and at least one of his children coming out of the back. Almost as to say "...but THIS is our family and THIS is what we do. [We rob banks]". This type of story seems right up Rockstar's alley while being something they haven't explored before (the main character having children).
Taking into consideration what I think may be true, the scene in which three men hop out of the exterminator van, it may be that the older gentleman is the main character and the other two are his children. Or only one could be his child. I think this could definitely be the case. The character out of the van first is clearly the leader. He has graying hair, making the age I predict seem right on target.
Thus, the guy at 00:41 that many people claim might be the main character, I believe is just a contact. The camera angle is very reminiscent of Rockstar's camera angles used when receiving missions from contacts. The camera moves in toward the side of the character that is looking over the balcony. This may be the first-person view of the main character walking up to meet the mission giver at the balcony.
I'm glad I'm making this post, so that if this comes true, I can point back to this and say "aha!".
I'm going to do more work to find the voice actor.
